Ingredients

For the Sherbet

  • 1 cup of sugar
  • 1/2 cup of water
  • 1 slice of lemon

For the cake

  • 3 eggs
  • 7 tbsp sugar
  • 7 tbsp milk
  • 7 tbsp vegetable oil
  • 7 tbsp all purpose flour
  • 7 tbsp dessicated coconut
  • 1 tsp baking powder

Instructions

making the sherbet

  • put all of the 3 ingredients together in a saucepan and mix well.
  • bring to a boil and cook in medium heat for about 20 minutes
  • set aside and let it cool down completely

Making the cake

  • crack the eggs in a large mixing bowl and add the sugar
  • mix together and then add all the other wet ingredients.
  • continue mixing until all ingredients are combined.
  • add the flour and the baking powder and mix thoroughly until there are no lumps.
  • add the coconut to the mixture and mix well together.
  • transfer into a midium size baking dish and bake in a preheated oven at 180° (356° Fahrenheit) for 35 minutes or until golden brown
  • after it's done baking, transfer into a cooling rack and pour the cooled Sherbet over the cake.
  • let the cake cool down and absorb the Sherbet for at least 15 minutes
  • enjoy with your favourite drink!
