crack the eggs in a large mixing bowl and add the sugar
mix together and then add all the other wet ingredients.
continue mixing until all ingredients are combined.
add the flour and the baking powder and mix thoroughly until there are no lumps.
add the coconut to the mixture and mix well together.
transfer into a midium size baking dish and bake in a preheated oven at 180° (356° Fahrenheit) for 35 minutes or until golden brown
after it's done baking, transfer into a cooling rack and pour the cooled Sherbet over the cake.
let the cake cool down and absorb the Sherbet for at least 15 minutes
